
Even under the best of circumstances, eating a healthy meal on the road can be a challenge. Grocery stores increasingly carry healthy prepared foods like salads which are always an option. What is another option widely available at grocery stores that will also support your health? Seafood dip and vegetables.
You can purchase canned seafood of your choice and mix it with sour cream to serve as the base for a vegetable dip. Buy washed and cut vegetables for easy dipping. Clams are a super source of iron; salmon a great source of Omega 3 fatty acids. You really cannot go wrong with your dip, though some herb mixes may be better than others.
When you hit the road, bring and/or buy the following items:
- Sour cream
- Canned seafood (clams, salmon, etc.)
- An herb mix
- Washed and cut vegetables for dipping
- Can opener
- Food storage container
Keep all of these items at home and put them in the cooler or buy most (or all) of the items on the road. You could easily pack a favorite herb mix or pick one up in the spices section of the store. On the road, mix the sour cream, seafood, and herb mix (to taste). Use the food storage container in lieu of a bowl. Any extra stays in the cooler nicely.
It makes a great meal and you do not end up feeling like you have been eating out too much. If you could pack a gym into the cooler and then actually use the equipment, you would really be set.
